There are both air to air, and air to water intercoolers. And no, not all turbo cars are intercooled. The Mitsubishi Eclipse is not intercooled from the factory, neither are those wonderful Chrysler 2.2 & 2.5 Liter Turbo powered cars from the late 80's - Early 90's. All turbo cars will benefit from a well performing intercooler though, and it becomes a must in high boost applications, to prevent detonation.
